This pizza dough is the bomb. It's super bubbly and fluffy and perfectly fermented. It's had a long slow rise both on the counter and in the fridge. It was expertly rolled by our pizza PhD's (these folks have a doctorate in the art of pizza dough rolling). Each ball is approximately 300 grams, this is the perfect size for a punchy personal pizza or a thinner larger one. We like to use a 9" cast iron skillet in our home oven, we get a beauty every time!
